Ingredients

2 pounds pork tenderloin

1 cup any stock or water

1/2 cup reduced-sodium soy sauce

1/3 cup balsamic vinegar

3 tbsp brown sugar

3, crushed garlic cloves

1 tsp Sesame oil

8 oz, mushrooms

1 tbsp, grated ginger

2 medium, cucumbers

2 medium, carrots

1 tbsp fish sauce

1 stick cinnamon

1 anise star

4 whole cloves

2 tbsp, choped mint leaves

4 cups, cooked white rice

1 head butter lettuce
Directions
I love Instant pot. It saves so much time. In only one hour you can get delicious pulled pork Asian style.

Season pork on all sides with salt and fresh cracked pepper. Heat a skillet on medium-high heat, spray with a little oil and brown the pork on all sides for about 7 – 8 minutes. |

In the Instant pot, combine the broth, soy sauce, balsamic, sugar, sesame oil, cinnamon, anise star, cloves, garlic and ginger. Add the pork and set your Instant Pot to 30 minutes on manual. Once time is up, make quick release. |

While the pork is cooking, make a salad. Shred cucumbers and carrots, add mint. Then add fish sauce and soy sauce. Drizzle with sesame oil. Mix well. |

Carefully open the lid. Remove the pork and set aside to rest a few minutes. Add the mushrooms to the Instant Pot and set on manual for 5 minutes. Once time is up, make quick release. |

Meanwhile, shred the pork using two forks. Return it to the Instant Pot and mix everything well. |

To prepare lettuce cups, place 2 tbsp of rice, top with 1/2 cup of pork, garnish with cucumber salad. Wrap up and start eating! |
