My girls love Panera cheddar broccoli soup.  I don’t have to ask them what they want when we are in Panera. It is always broccoli soup.  It’s creamy, salty and savory. I’ve used whole milk but if you want the true Panera likeness – you have to use half and half. In my opinion however – there is a little difference in taste and I always try to cut some calories if it is possible.

Steps

1
Done

Melt 1/4 cup of butter in a pot. Add onions and sauté over medium heat for 5 minutes or until the onion is slightly brown.

2
Done

Add garlic and cook for about 1 minute. Add butter and cook over medium heat for about 3 to 5 minutes, until the butter is slightly golden color.

3
Done

Slowly add the chicken stock and milk, whisking constantly. Cook the mixture over low heat for about 15 to 20 minutes, or until it has thickened, occasionally stirring.

4
Done

Add the broccoli, carrots and cook for 10-15 minutes on low heat. Add salt, pepper & nutmeg.
Continue to cook the soup on low heat and slowly add the grated cheese a handful at a time and stir to avoid clumps. Do not bring to a boil.

5
Done

Once all the cheese is melted, remove from heat, and serve immediately in sourdough bread bowls.
