1 medium, chopped onion

1 large, shredded carrot

1/4 cup, melted butter

1/4 cup flour

2 cups chicken stock

2 cups whole milk

3 cups, chopped into bite size pieces broccoli

8 oz, grated cheddar cheese

1/4 tsp nutmeg

to taste salt and pepper

4 Panera sourdough bread bowl

1, chopped garlic cloves
Directions
My girls love Panera cheddar broccoli soup. I don’t have to ask them what they want when we are in Panera. It is always broccoli soup. It’s creamy, salty and savory. I’ve used whole milk but if you want the true Panera likeness – you have to use half and half. In my opinion however – there is a little difference in taste and I always try to cut some calories if it is possible.

Melt 1/4 cup of butter in a pot. Add onions and sauté over medium heat for 5 minutes or until the onion is slightly brown. |

Add garlic and cook for about 1 minute. Add butter and cook over medium heat for about 3 to 5 minutes, until the butter is slightly golden color. |

Slowly add the chicken stock and milk, whisking constantly. Cook the mixture over low heat for about 15 to 20 minutes, or until it has thickened, occasionally stirring. |

Add the broccoli, carrots and cook for 10-15 minutes on low heat. Add salt, pepper & nutmeg. |

Once all the cheese is melted, remove from heat, and serve immediately in sourdough bread bowls. |
