1 head, separated into florets cauliflower

2, diced carrot

1 cup frozen peas

1 cup frozen corn

1 small, diced onion

3, minced garlic cloves

1 tbsp, grated ginger

2 egg

2 tbsp cooking oil

1 ts Sesame oil

2 tbsp soy sauce
Directions
Cauliflower fried rice is a healthy substitute for fried rice. It is so popular now that you can find riced cauliflower almost in any supermarket. If you can’t find it, you can easily “rice” the cauliflower yourself using a food processor. It is very easy and quick.

To make the cauliflower rice, pulse cauliflower in the bowl of a food processor until it resembles rice, about 2-3 minutes; set aside. |

Heat 2 tbs of cooking oil in a wok or a large nonstick skillet over medium heat, add ginger, garlic and onion, fry for 5 minute or until golden color. |

Then add carrots, frozen peas and corn. Fry it for 5 more minutes. Add cauliflower rice and cook, stirring constantly, until heated through and the cauliflower is tender, about 3-4 minutes. |

While cauliflower rice is cooking make an omelet. Set the separate pan over medium-high heat. Beat 2 eggs in a bowl using a fork. Oil the pan with vegetable oil. Pour a thin layer of egg mixture into the hot pan and swirl to coat pan. When egg layer is firm on the bottom but still slightly liquid on top, lift up the edge of the omelet with a spatula and fold end over remaining egg layer; continue rolling the omelet to the end. Cut the roll into small pieces. |

Add cut omelet, sesame oil and soy sauce to the cauliflower rice, stir well and fry couple minutes more. |
