1 large head, cut into florets cauliflower
6, peeled garlic cloves
1 tbsp butter
1 tsp salt
chopped fresh chives
to taste salt and pepper
1 tbsp oil

Have you ever tried cauliflower mashed “potato” ? It tastes just like mashed potato. My girls  didn’t even realize that it wasn’t real mashed potato. It is so easy to cook, tasty and healthy. What else do you need?

Heat 1 tbsp of oil in a frying pan with high sides. Smash garlic with a knife and add it to the oil. Fry for a couple minutes. Add cauliflower, cover with water, add salt and cook for 15 minutes or until the cauliflower becomes completely tender. Drain and transfer the cauliflower to a blender. Add butter and blend it until smooth. Top with chives and freshly ground pepper.
