Ingredients

3 cups, cooked rice
1 lb, diced into 1/2-inch pieces chicken breast
2 cups Costco frozen mixed vegetables
3 cubes frozen crushed garlic If you don't have frozen crushed garlic, just use 2 fresh garlic
1 lb, frozen or fresh broccoli
1, diced onion
3, trimmed and sliced into thin rounds green onion
3 tbs soy sauce
1 tbs ginger
2 tbs Sesame oil
3 egg

    Chinese fried rice is always better with leftover rice, and if you have a bag of frozen vegetables, it will take you 20 minutes to make dinner. What can also save you time is frozen crushed garlic from Trader Joe’s and Ginger stir in paste that you can find in Whole Foods or Fairway. The easiest way to cook rice is to cook it in a rice cooker. I have this one and I am very happy with it.

    Heat 1 tbs of sesame oil in a wok or a large nonstick skillet over medium heat, tilting the pan to coat completely. Add ginger, garlic and green onion, fry for 1 minute. Add chicken and cook for 5 minutes. Transfer cooked chicken onto a plate.

    Add the second tbs of sesame oil in the wok and add onions. Cook for 2 minutes or until golden color. Then add frozen vegetables and broccoli and fry for 5 minutes.

    While vegetables are cooking make an omelet. Set the separate pan over medium-high heat. Beat 3 eggs with one tablespoon of soy sauce in a bowl using a fork. Oil the pan with vegetable oil. Pour a thin layer of egg mixture into the hot pan and swirl to coat pan. When egg layer is firm on the bottom but still slightly liquid on top, lift up the edge of the omelet with a spatula and fold end over remaining egg layer; continue rolling the omelet to the end. Cut the roll into small pieces.

    Add rice, omelette, and chicken to the vegetables and mix well. Add more soy sauce and cook for 5 minutes.
