Soak dried mushroom until they're plumped and softened, about 15 minutes. Rinse mushrooms under running water to remove any hidden grit. Trim away about 1-inch of the enoki mushrooms root section and tear the enoki mushrooms into small bite size bundles. |

Press the “Sauté” button on the Instant Pot, add oil in a pot and fry onion for 5 minutes or until gold color. Add all mushrooms and fry for 10 more minutes. |

Add the remaining ingredients, mix well, then cover and lock the lid. Set your Instant Pot to 10 minutes on manual. Once time is up, make quick release. |
