Directions
Spiralized zucchini salad with avocado and edamame is a fresh, quick and tasty salad. You can buy already spiralized zucchini at Whole Foods or Trader Joe’s. However I prefer making it myself. I believe it has more nutrients if it was not seating on a shelve at the store. It takes no time to make zucchini noodles with spiral vegetable slicer. I have this one and I love it. Or you can use mandoline slicer to make zucchini noodles. I had this one for many years and I use it almost every day. If you can’t make noodles out of the zucchini, simply julienne zucchini by knife.

Use a spiralizer or a mandolin fitted with a julienne blade and cut the zucchini into thin spaghetti-like strands. Cut the strands by scissors into smaller size lengths and place it in a large bowl. |

In a small bowl whisk together lime juice, salt, avocado oil, soy sauce, garlic, grounded coriander seeds, shredded basil and mint. Pour on top of zucchini and toss. |

Add diced avocado and edamame to the zucchini and mix well. Garnish with sesame seeds and sprinkle with sesame oil. |
